One of the most tried and true ways to prepare the perfect grilled chicken is a traditional BBQ glazed chicken. There are many variations on BBQ glazed chicken, but we have figured out the perfect tricks and tips to make your chicken picnic perfect.

The following steps will walk you through the steps from preparing the meat, creating the perfect sauce, and grilling it to perfection.

1. Preparing your chicken.

First thing's first, you want to prepare you chicken for even cooking. Instead of cooking a whole chicken, separate your bird to make it easier to get a consistent temperature and quicker cook time. Not only does this make for more consistent temperatures, but it also makes it easier to season and prep.

2. Seasoning the chicken.

Once the chicken is separated into thighs, breast, drumsticks, and wings, you can prepare your chicken with your choice of seasonings. Others may recommend that you should brine your chicken before cooking, but that is completely unnecessary. It isn't need to get the perfect BBQ glazed chicken.

We recommend using a dry rub to help reduce moisture when cooking. This will lead to crispier chicken. No one likes soggy chicken skin! To ensure that you get the perfect, crispy skin, using a dry rub prevents the addition of extra moisture. Instead of buying a store bought rub, you can create your own with some spice cabinet staples. Using tablespoons of salt, paprika, garlic powder, onion powder, brown sugar, pepper. You can store your mixture in an airtight container for up to a year!

There are also other steps you can take to remove any extra moisture. Once you have separated the chicken, pat the meat with clean, dry paper towels. You can also pop the pieces of chicken into the fridge to help evaporate any moisture still lingering in the skin or on the surface of the chicken.

4. Cooking low and slow

Whether you are using a dry rub, seasonings, or marinade, another important key is cooking the chicken low and slow. Grill experts all agree, setting your grill or smoker at 250 to 275 degrees is the perfect temperature range. The low temperature allows the smokey taste permeate throughout the meat and render all of the fat. Make sure to monitor the temperature of the chicken throughout the cooking process with an internal meat thermometer.

5. Hit it with some heat!

As the chicken begins to get close to the perfect temperature for doneness, approximately 165 degrees, make sure to turn up the heat to give the chicken a quick hit of intense heat to crisp up the skin. This is not necessary if you removed the skin before cooking.

6. Glazing the chicken

Now, your chicken has reached 165 degrees, but you aren't done yet. If you are looking to make BBQ glazed chicken that people will rave about, then you need to go a little further. You might of noticed that we haven't mentioned sauce yet, even though you can't have a glaze without sauce. Here is where the sauce comes into play. Pull the chicken off of your grill or smoker and coat with your favorite sauce. The easiest way to do this is to fill a bowl with your choice of sauce and dip each individual piece of chicken. Allow the glaze to set on the meat before placing it back onto the grill. The high heat of the grill will be perfect to create a glaze and caramelize any sugars in the sauce. Once again, give the chicken another temperature check, just to be on the safe side.

It is important to remember that cooking times will vary from grill to grill. It is important to monitor the temperature for doneness, taste, and most importantly food safety. Cooking time is usually around 90 minutes but it is important to remember that you may need more or less cooking time.

7. Give the chicken one last dip.

Remove the chicken from the grill and give each piece once last dip in sauce. Allow the meat to rest for about ten minutes before serving. We recommend taking a piece to cut up and check for quality. This is also perfect opportunity to give the chicken a little taste test (our favorite part).
