- Olive oil
- Garlic
- Greek yogurt
- Mayonnaise
- Apple cider vinegar
- Sugar
- Produce – Cabbage, matchstick carrots, cherry tomatoes, avocados, onions
Whiskey Shepherd’s Pie
- Preheat oven to 350 degrees.
- Spray a glass 9” deep pie pan or casserole dish with a non-stick cooking spray.
- In a bowl, combine flour, sugar, baking soda, baking powder, salt, and chives and gently whisk.
- Add in the butter and use a pastry cutter or fork until you have pea sized chunks.
- Pour in cream and gently combine.
- Pour the mixture (should be crumbly) onto a highly floured surface.
- Slowly add cheese and combine into dough.
- Pat the dough into the bottom of a pan, all the way up the sides so it’s even with the top of the pan.
- Add the pulled pork and cover the bottom of the pan.
- Drizzle BBQ sauce over the top and then sprinkle cheese over it.
- Using a spatula, gently spread mashed potatoes over top.
- Bake for 35-40 minutes or until crust is golden brown. Cool for fifteen minutes before slicing.
Loaded Sweet Potato Fries
- Season pork shoulder with salt and pepper.
- Heat in a pan and sear for four minutes and then put in a crockpot on high for four hours or slow for eight hours. Shred and toss with Root Beer and sauce. Keep warm.
- Layer fries, pulled pork, black beans, caramelized onions, cheeses, and repeat.
- Bake at 400 degrees for fifteen minutes until cheese has melted. Top with salsa and green onions.
30 Minute Posole
- Finely dice the onion, then add it to a large soup pot along with the canola oil. Sauté the onion in the oil over medium heat for 3-5 minutes or until it is tender and transparent. Add the flour and chili powder and continue to sauté for two minutes more. The mixture will be dry, so stir continuously to prevent burning.
- Add 2 cups water, tomato paste, cumin, garlic powder, cayenne pepper, and salt to the pot. Whisk the ingredients together until the tomato paste is dissolved. Allow the mixture to come to a simmer, at which point it will thicken.
- Finally, add the chicken broth, shredded meat, diced chiles, and hominy (drained). Stir to combine and then heat through (about 10 minutes).
- Cut the lime into wedges and roughly chop the cilantro. Top each bowl with chopped cilantro and a wedge of lime to squeeze over top.
Slow Cooker Gyros
- In a small bowl, combine cumin, chili powder, oregano, cayenne, salt, and pepper. Season pork shoulder by rubbing spice mixture thoroughly on all sides.
- Heat olive oil in a large skillet over medium high heat and sear both sides until brown, about four minutes.
- Place garlic, onions, pork, and one cup water into a slow cooker. Cover and cook on low heat for eight hours or high heat for four to five hours.
- Meanwhile, in a large bowl, combine cabbage and carrots. In another bowl, whisk together Greek yogurt, mayonnaise, apple cider vinegar, and sugar to taste. Pour over slaw and stir until well combined. Refrigerate for at least one hour.
- Remove pork loin after cook time and shred the meat before returning to the pot with the juices. Add more seasoning if necessary and cover and warm for an additional thirty minutes.
- To assemble, top each pita with pork, slaw, tomatoes, and avocado then serve immediately.
