Quick And Easy: Smoked Pork Steaks

You don't need a whole pork

First and foremost, it is important to note that you do not need a whole pork shoulder to make enough pork steaks. All you need is a sizeable piece of pork butt then slice it into as many sized steaks as possible.

Thus, it is very cheap and affordable to acquire just a kilogram of two of pork butt.

Step by step instructions

Here is my brine recipe in which it should be noted that the measurements that I have given below for my recipe depend on the quantity of the pork steak.

For brine, use dark brown sugar, water, sprite and coke, apple juice, salt, and pepper.

It is advisable to brine the pork steaks for at least an hour for best results or even if possible for the night. Remove the pork steaks from brine afterwards, rinse it with cold water and then place them on a tray.

Grime a quantifiable amount of rub on the steaks’ both sides. At this point, you are allowed to grab a beverage to cool yourself down. Afterwards, light your coals and prepare the grill for smoking.

For the pork steaks placed on the tray, go and sprinkle them with honey on the side faced upwards.

Clean your grill then place the pork steaks very far away from heat. Place the form of wood you are using on the hot coals. In my case, I prefer apple wood which produces a sizeable amount of smoke.

If not available at your household, you can easily acquire them from your nearest grocery store.

Here is the interesting part. Smoke the pork steaks for roughly one hour at a temperature ranging 200 to 250 degrees Celsius. It is important for you to rotate the pork steaks to enable them spend equivalent time near the fire.

You should ensure that smoke billows the entire period. As they are smoking, pour half of the sprite and coke into the squirt bottle. Spray the pork steaks with this every 15 to 20 minutes.

Having smoked the pork steaks for an entire hour, carefully take away the steaks from the grill wrap them individually with an aluminium foil. Wrapping them in an aluminium foil tenderizes them passively.

Put more coals to your grill to ensure that it remains at 250 degrees Celsius. Once more, take away the pork steaks from the heat then leave them to cook while wrapped in the aluminium foil for utmost 45 minutes.

After this, check the meat to see if is pulling away from the bone. If you note that the meat is still tightly attached to the bone, you can carefully wrap the pork steaks in an aluminium foil and leave it to cook for some minutes.

After the pork steaks have attained your desired tenderness, unwrap them from the foil and put them back to the grill. Pour the juices in the foil back to the pork steaks, then dash little bbq sauce on the steaks.

For the ultimate touch, dash some dark brown sugar and allow it cook for 5 to 10 minutes, just enough time for the pork steaks to caramelize.

You are ready to enjoy your pork steaks. After you are done you will see a pink line called a smoke ring surrounding the pork steak’s slice. This line is an indicator that you have cooked perfectly to give you smoky, tender, and delicious BBQ treat.

Smoked Pork Steaks

  • Prep Time: 10 minutes
  • Cook Time: 2 hours
  • Total Time: 2hours and 10 minutes

Ingredients

For brine:

  • 2c water
  • 1c apple juice
  • 1/2c dark brown sugar
  • 1/2c can of sprite and coke
  • 1/2c salt

Other ingredients you could use for brine that I have not used

  • Pepper
  • 1 tablespoon of garlic powder

For pork steaks:

  • 2 to 3 bay leaves
  • Your right number of pork steaks as per your needs
  • Your preferred BBQ sauce
  • Brine
  • All-purpose rub
  • A can of sprite and coke
  • A spray/squirt bottle
  • Honey
  • Equipment
  • A spray/squirt bottle
  • A tray
  • Grill
  • Aluminium foil

Instructions

  • Set up the grill for indirect heating.
  • Brine the steaks for about one hour or if possible overnight. Remove the steaks from brine, rinse them with cold H2O then place them on a tray.
  • Sprinkle rub coating on the steaks’ both sides. Sprinkle honey on one side facing up.
  • Keep the steaks as distant from heat as possible. Put your form of wood (I used apple wood) on the hot coals.
  • Smoke the pork steaks for at least one hour at 200 to 250 degrees Celsius rotating them to enhance they spend equivalent time near the fire. Ensure that the smoke billows the entire period.
  • In the process of smoking, use the remaining half of sprite and coke. Pour it into a squirt bottle and sprinkle it on the smoking steaks after every 15 to 20 minutes.
  • Remove the pork steaks and wrap them individually using aluminium foil after smoking them for about one hour.
  • Put some more coals to ensure that your grill stays at 225 degrees Celsius temperature range. Also, ensure that the wrapped pork steaks are as far away from heat as possible. Allow them to cook for utmost 45 minutes while wrapped in the aluminium foil.
  • Check a slice of the steaks to see if the meat is pulling away from the bone. If you check and see that the meat is still tightly held to the bone, wrap the steaks once more in an aluminium foil and allow them to cook for some minutes while placed away from heat.
  • After the pork steaks have achieved your desired tenderness, unwrap them from the aluminium foil and place them back on the grill. Pour the juices present on the aluminium foils back on the pork steaks. Afterwards dash some little bbq sauce on the pork steaks then dust some specs of the dark brown sugar on the pork steaks.

Allow the steaks to cook for about 5 to 10 minutes to give them enough time to caramelize. Once you are done, you are ready to serve your smoked pork steaks.
